To explain the founding of Gelateria Baroncini, which took place right after the war in 1946, we must go back to 1921, when Faustino Baroncini began his interest in milk and later in dairy products. The Baroncini family continued the business of collecting and selling milk, and later became producers with their own farm in the Serpiolle area (above the Careggi hospital). The natural progression was to open a shop on Via Celso, producing and selling milk, ice cream, and whipped cream with raw materials from their own production. Around the 1960s, they achieved significant success. Aldo Baroncini, the grandson of Faustino, maintained the shop’s original characteristics, preserving its roots as an old dairy that later transformed into a gelateria, keeping the same recipes and working methods, and continuing to run the business to this day.
