History

Since 1930

According to photographic documentation, this establishment was already active as an osteria/trattoria in 1933 under the name “Trattoria Latini,” although it is likely that the restaurant activity dates back to a previous period, around the late 19th century or early 20th century. When Florence became the capital of Italy in 1865, housing was built for government officials and ministry directors in the premises that today house the trattoria on Via dei Pilastri. In the early 1900s, the premises became a trattoria, which was managed by the Latini family starting in 1932.

The business continued under the name “Trattoria da Angiolino,” and in 1966, following the Florence flood, it suffered significant damage due to the river’s inundation. Over the years, the trattoria has undergone various name changes, and since 1995 it has been known as “Acqua Cotta.” Since 2004, the establishment has been run by Luca Lastrucci, an excellent chef with over 20 years of experience in renowned European restaurants, who, while staying true to the restaurant’s tradition, offers dishes focused on classic Tuscan cuisine.
