Vittorio Carretti, current owner of “La Casa della Bilancia” in Florence, belongs to the fifth generation of a family of merchants specializing in new and antique scales and slicers, tracing its origins back to Cornelio Carretti, who started the business in 1870. The type of activity carried out in this shop—selling, servicing, and repairing slicers and scales—is almost unique, especially when it comes to restoring antique models. The shop, which has remained unchanged over time, moved from its historic location in the center of Florence at Via Nazionale 160/r to Viale Luigi Gori 36/40, where visitors can admire fine machines and professional equipment featuring silver-plated finishes and red enamels, still in use today in delicatessens and traditional restaurants.
