Since 1968
There is evidence of a bar-pastry shop at the corner of Piazza San Firenze and Via de’ Gondi, in the historic Palazzo Gondi, since the early 1900s. According to an oral tradition, the Pasticceria San Firenze is where the Fedora dessert was created. The Fedora is eaten with a spoon and comprises a sponge cake soaked in liqueur, whipped cream, and chocolate pastry. In November 1966, the Arno river broke its banks and the pastry shop, like all of Florence’s historic centre, was hit hard by a terrible flood. In January 1968, the brothers Sergio and Marcello Bronzi reopened the Bar Pasticceria San Firenze in the completely renovated premises. The family management continues to this day, with cousins Alessandro and Stefano and nephew Andrea, assisted by Adriana’s priceless collaboration. The original furnishings were replaced after a fire in ‘96.
