Since 1955
Originating from Colline, the Caroti family began their business in January 1955 when the Caroti brothers (Angiolo and Pietro) took over a small wood-fired bakery in Via Vecchia di Pozzolatico (FI), known as the “Perissi or Pozzolatico bakery.” It was initially operated by Danilo, the son of Angiolo, and Dina, his wife and Danilo’s mother. Along with the bakery, there was also a small grocery store and wine shop, managed by Renza, Danilo’s sister. Ten years later, in 1964, a food shop was opened in Scandicci for the younger sister, Franca. In the following year, Danilo’s wife, Mara, joined the business to help her husband. In 1968, the bakery underwent its first major renovation with state-of-the-art equipment for the time. In March 1971, the shop in Scandicci was sold to focus on supplying bread and baked goods to grocery stores throughout the Florence area. In 1979, a second oven was purchased, doubling production capacity. This expansion meant that the traditional “merenda shop of Lastrichino” had to make way for new machinery. In 1992, a retail shop was opened in front of Porta Romana, personally managed by the third generation of the Caroti family: Danilo’s daughters, Martina and Olivia, and Franca’s daughter, Francesca. In 2003, a new store was opened on Via Scialoia 34r in Florence, featuring a pastry lab. The following year, in 2004 and 2005, stores were opened in Tavarnuzze and Impruneta. In 2009, Danilo and Mara passed the business on to their three children, who divided the company among themselves. In April of that same year, Olivia, Danilo’s second daughter, and her husband, pastry chef Marco Sgrilli, took over the Via Scialoia store. They continued to sell bread but enhanced the focus on pastry production. In 2013, Olivia and Marco decided to expand their own production of gastronomy, returning to the traditional role of the “Pozzolatico shop,” and they continue this long-standing family tradition today.
