Since 1956
The pastry shop was opened in 1928, and after thirty years of operation, in 1956, the management was handed over to Enzo Castaldini, who ran the shop for 50 years. Under the guidance of the “historic” pastry chef Pietro Robiglio, Castaldini began creating new types of sweets and invented a special yeast, which he used primarily for the artisanal production of panettone and Easter colomba cakes. Since July 2006, the shop has been managed by the Andreini family, who continue to rely on the pastry chefs who worked under the old management, so much so that, even today, the yeast created by Enzo Castaldini is still used for pastry production. The Andreini family completely renovated the premises with high-quality furnishings, with particular emphasis on the marble counter, while also striving to recreate the traditional style of the pastry shop.
