Since 1872, the business was called “Trattoria Ponte dell’Asse” (there is still a marble sign above the entrance of the trattoria). In 1920, the trattoria took the name “Bibe”, the nickname of the great-grandfather of the present owners. Their great-grandfather had a very particular and challenging name: Paradiso. Maybe that’s why everyone called him “Bibe”, which means “drink” in Latin. He was an innkeeper who knew how to inspire his clients’ affection, so much so that Eugenio Montale himself, a famous Italian poet, fascinated by his figure and by the place wrote a poem about him: “Bibe al ponte all’Asse” published in the collection “Le Occasioni” in 1937. Bibe had a daughter: “la bruna tua reginetta di Saba che mesce Rufina di 14 gradi” [“your little Queen of Sheba who pours 14% Rufina”]. The grandmother Scarselli Liliana, the “little queen of Sheba”, the grandfather Baudone Fulvio, and the aunt Baudone Annusca, continued the business from the 1960s until the years 2012/13. Now, having reached the sixth generation with Matteo Baudone, he and his uncle Fabio and his parents keep the tradition of the restaurant alive.
