Trattoria Sostanza, called “i’ Troia”, was founded in 1869 by Pasquale Campolmi as a tavern, wine bar, and food store. The name “i’ Troia” derives from the fact that one of the old owners, as well as being renowned as a great cook, Guido Campolmi, used to warmly greet the regulars by giving them a pat on the back; since his hands were often dirty with various sauces, customers would scold him exclaiming: “ma tu’ sei un troiaio” (“you son of a bitch”). Until 1977, the trattoria was directly managed by the Campolmi family, who also owned the premises, and then it was leased to the employees of the family. The current restaurant is run by the second generation of these employees and basically maintains its original features.
